Soft and Chewy Malteaser Cookies

One of BB’s birthday presents from his Pirate Party last week was a large box of Malteasers. We all love Malteasers and we knew the box would not last long, but BB suggested we cook with them. I have never made any thing with Malteasers except for decoration so we opted for soft and chewy Malteaser cookies.

We used a simple recipe and literally bashed up the Malteasers a bit and stirred them into the mix.

Cookie plus Malteasers surely equals yummy treat!

Malteaser Cookies

So you will need:

170g butter

200g dark brown soft sugar

100g of castor sugar

1 tsp of vanilla essence

Half a tsp of salt

Half a teaspoon of bicarbonate of soda

250g Flour

2 Eggs

Method

Pre-heat the oven to 160 degrees (for a fan oven)

Beat together using an electric whisk if you have one the butter and sugars until creamy.

Add the bicarbonate of soda and salt, the flour and eggs and vanilla essence and beat together.

Lightly bash or half (bashing is more fun) the Malteasers and stir by hand into the mix.

Have a bit of silliness in the kitchen – a must have ingredient!

Line baking sheets with grease proof paper. Add on four to five ‘dollops’ (technical term) of mixture to the sheets. Keep big spaces between as they will spread in the oven.

I found my mixture made 16 cookies.

Cook for 8-10 minutes.

We found them to be very yummy, but the larger lumps of Malteaser were the best so really lightly bash! However Little Madam really didn’t seem to mind!
